Porridge
Ready in 10 minutes this Keto Porridge is so easy to make but delicious and filling too. With a whopping 13g of fibre per bowl, 5g of net carbs, and 28g of healthy fats it makes for a great start to the day.

- 2 tbsp/14g milled flaxseed/linseed
- 2 tbsp/16g coconut flour
- 2 tbsp/10g desiccated coconut
- 2 tbsp/12g ground almonds
- 2 tbsp/20g sugar-free icing sugar (erythritol stevia blend)
- 1 tbsp/9g hulled hemp hearts
- 1/4 tsp vanilla powder
- Generous pinch salt
- 250ml coconut milk (fresh from carton not tinned)
- 125ml water
Optional toppings
- 1 tbsp mixed seeds
- Small handful berries

Step 1
Place all of the ingredients except for the coconut milk and water into the saucepan. Use a whisk to stir them together then gradually whisk in the coconut milk followed by the water. Leave to sit for 5 minutes.

Step 2
Place onto a low-medium heat and bring to a low boil, whisk continuosly for 3 to 5 minutes until thickened. Transfer to a bowl and serve with a tablespoon of mixed seeds and a small handful of berries if you wish.
