Posh Beans on Toast

A much healthier and tastier take on beans on toast. Packed with flavour and goodness, this is a great family meal that can be enjoyed for any meal of the day.

Ingredients

  • 85g sundried tomatoes
  • 120g jarred roasted red peppers
  • 300g passata
  • 1 tsp smoked paprika
  • 2 garlic cloves (minced)
  • ½ teaspoon salt
  • Pinch pepper
  • 3 cans cannellini beans (drained and rinsed)
  • Fresh basil to garnish (optional)
  • Chilli flakes to garnish (optional
  • )Serve on toasted sourdough with butter

Method

  • Step 1

    In your ninja blender add the sundried tomatoes, roasted red peppers, passata, smoked paprika, garlic, salt and pepper. Blend until completely smooth.

  • Step 2

    Pour the sauce into a large pan along with the cannellini beans and cook for 8 minutes on a medium heat. Stir every few minutes.

  • Step 3

    Meanwhile toast some bread, and butter it once toasted.

  • Step 4

    Load up the toast with the cooked beans and garnish with fresh basil and chill flakes should you wish. Enjoy.
