Prawn Fry
This recipe is a well known recipe from Kerala. It is a very quick and easy recipe but it is packed full of flavour.

- 2 tbsp Coconut Oil
- 1 tsp Mustard Seeds
- 1 Onion, diced
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 10 fresh Curry Leaves
- 450g King Prawns, Without shell, Deveined
- 1/2 tsp Turmeric Powder
- 3/4 tsp Red Chilli Powder
- 1/4 tsp ground Black Pepper
- 3 tbsp Water
- 1 tbsp Lemon Juice
- 2 tbsp fresh Coriander, chopped

Step 1
Select saute and add Oil.

Add Mustard Seeds. Once they begin to pop (10 – 15 seconds), add Onions, Ginger and Garlic Paste. Saute 5 minutes. Add Curry Leaves and saute for 10 seconds.

Add Prawns, Turmeric, Red Chili Powder, Black Pepper and Water. Cook for 2 minutes.

Step 4
Assemble pressure lid. Pressure cook on high for 4 minutes. Do a quick release by turning the pressure cook dial to vent. Open lid carefully.

Squeeze over Lemon Juice and garnish with Coriander.
