Quick Mexican Style Soup

A simple to make Mexican style soup. The rich flavours really come together to create a delicious warming soup with a spicy kick!

  • 400g Minced beef
  • 2 Shallots
  • 1 Red chilli
  • 1 Garlic clove
  • 1 Red pepper
  • 1 Green pepper
  • 1 can Chopped tomatoes
  • 2 tbsp Tomato puree
  • 1 can Sweetcorn
  • 1 can Kidney beans
  • 2 tbsp Oil (for frying)
  • 2 tbsp Chilli olive oil
  • To taste Salt and pepper (you can use cayenne pepper for flavour)

For garnish

  • Grated cheese
  • Tortilla chips
  • Fresh parsley
  • Lime

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!


  • Step 1

    Turn on your Ninja Foodi Multicooker and select the sear/sauté option. Add both the oil and the chilli olive oil, finley chopped shallots and garlic. Fry for a couple of minutes

  • Step 2

    Add the beef and seal for another 5 minutes

  • Step 3

    Add all the rest ingredients (apart from the garnish) and spice up to your liking. Choose the pressure option and cook for 15-20 min. Once pressure cooking is complete, carefully turn the seal to release the pressure

  • Step 4

    Serve with tortilla chips, cheese, lime wedges and if you wish add sour cream or yogurt
