Raspberry Crumble Bars

Raspberry Crumble Bars

Ingredients

  • 250g oats
  • 100g coconut oil, melted
  • 50g sugar
  • 1 tsp baking powder
  • 200g frozen raspberries
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup

Method

  • Step 1

    Preheat the oven to 180c fan and line a small baking dish with parchment paper

  • Step 2

    Add half of the oats to the Ninja food processor and blitz until they reach a flour like consistency

  • Step 3

    Add this to a large bowl along with the other half of the oats, melted coconut oil, sugar and baking powder. Mix well

  • Step 4

    Add half of this mixture to the baking dish, press down with a spoon and bake for 7 minutes

  • Step 5

    In the meantime add the frozen raspberries to the single serve cup attachment along with 4-5 tbsp of water and blitz until smooth

  • Step 6

    Add in the chia seeds and maple syrup and mix with a spoon

  • Step 7

    Pour this mixture into dish and then add the remainder of the crumble mixture to the top

  • Step 8

    Bake for 25 minutes

    Allow the crumble to cool completely in the dish before removing and cutting into 9 squares
