Raw Caramel Brownie

- 1 heaped cup pitted dates
- 3 tbsp raw cacao powder
- 1 tbsp coconut oil
- 1/2 cup rolled oats
- 1/2 cup dessicated coconut
- 1 1/2 cup pitted dates
- 1/2 cup almond milk- more if needed
- 1 tsp coconut oil
- Pinch of sea salt
- 80g vegan dark chocolate

Step 1
In your Ninja food processor combine the oats and desiccated coconut and blend to form a rough flour.

Add in the dates, cacao powder and coconut oil, then blend until everything is well combined.

Press this into the base of a lined brownie tin and pop this into the freezer whilst you prep the other layers. For the caramel, blend the dates, almond milk, coconut oil and salt together until smooth and creamy.

Pour in extra milk to help things blend if needed. Once smooth and creamy, spread the caramel over the chocolate brownie layer and return the slices to the freezer.

Melt the chocolate and coconut oil together, then pour this over the caramel. Leave these to set in the freezer for 3hours+ before carefully slicing into portions.
