Roast Peppered and Thyme Beef With Crushed Jersey Royal Potatoes

This cooks beef rare to medium. 

TIP: You can use topside instead of rolled rib of beef. If you prefer your beef more well done, cook for another 5-10 minutes.

  • 1kg rolled rib of beef
  • 3 tbsp rapeseed oil, divided 
  • 1-2 tsp flaked sea salt
  • 1-2 tsp ground black pepper
  • Thyme sprigs
  • 750g Jersey Royal potatoes
  • 500g mixed vegetables like Chantenay carrots, parsnips or shallots

Method

  • Step 1

    Insert divider and both crisper plates into the drawer.  

  • Step 2

    Brush beef all over with oil. Sprinkle with 1 teaspoon sea salt and black pepper. Place beef in Zone 1 with fat uppermost. Sprinkle over the thyme sprigs.  

  • Step 3

    In a large bowl, add potatoes, remaining oil and season as desired.  Toss to ensure the potatoes are evenly coated. Add potatoes to Zone 2. Reserve remaining oil. 

  • Step 4

    Select Zone 1, select ROAST, set temperature to 170°C, and set time to 35 minutes. Select Zone 2, select AIR FRY, set temperature to 200°C, and set time to 22 minutes Select SYNC. Select START/STOP to begin cooking.  

  • Step 5

    Meanwhile, toss mixed vegetables in remaining oil and season as desired. 

  • Step 6

    When 20 minutes remain, open drawer and using silicone-tipped tongs, flip beef over and add mixed vegetables to Zone 1, reserving any oil in bowl. Close drawer to continue cooking. 

  • Step 7

    When 10 minutes remain, open drawer and remove potatoes into bowl with oil. Mash potatoes slightly to crush. Toss in remaining oil and then add back to Zone 2. Flip vegetables around beef. Close drawer to continue cooking. 

  • Step 8

    When cooking is complete, allow beef to stand covered for 10 minutes.
