Roast Turkey Dinner

For the stuffing
- 50g dried cranberries
- 25g dried apricots, chopped
- 2 tbsp port
- 20g butter
- 1 large red onion, finely chopped
- 1 garlic clove, minced
- 100g fresh breadcrumbs
- 1 tbsp fresh finely chopped thyme leaves
- 200g cooked ready peeled chestnuts, chopped
- 4 herby sausages, skinned
- Salt and pepper to taste
For the turkey
- 40g butter, soften
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 2 garlic cloves, minced
- 1 sprig fresh thyme
- 1 sprig rosemary
- 2 garlic cloves, crushed
- 1.8kg turkey crown
- 6 Pancetta or streaky bacon slices
- 250ml white wine
- Salt and freshly ground black pepper
- 4 pigs in blankets
For the vegetables
- 500g roasting potatoes, cut into 4-5cm pieces
- 200g Chanteray carrots, if large cut in half
- 300g parsnips, cut half and into 4-5cm lengths
- Salt and freshly ground black pepper
- 2 tbsp oil
- 200g brussels sprouts
- 250ml water
Utensils

Step 1
Move slider to AIR FRY/COOKER position. Select SEAR/SAUTÈ and set temperature to 2. Add butter and let it melt. Add onion and garlic, cook for 10 minutes until the onions are soft but not brown. Stir occasionally. Turn off unit.

Add remaining ingredients and thoroughly mix together. Remove stuffing from pot. Wipe out pot.

In a small bowl, mix butter, chopped herbs, garlic and seasoning together. Carefully lift the skin away from the turkey breast to loosen it. Smear two-thirds of the butter under the skin and the rest on top of skin. Stuff the neck end of the turkey with the stuffing, then tuck the skin under the bird.

Add wine, whole garlic, a sprig of thyme and rosemary to the pot.

Place turkey in the Cook & Crisp Basket, arrange the pancetta slices on top, securing with a cocktail stick if necessary and place the basket in the pot. Insert probe into the centre of the thickest part of the turkey. Close the lid and move slider to STEAMCRISP.

Close the lid and move slider to the COMBI-STEAM mode position. Select STEAM ROAST, set temperature to 180°C, then select PRESET. It is already preset to chicken. Press START/STOP to begin cooking (the display will show PRE for approximately 9 minutes as the unit steams, then the timer will start counting down). The turkey may take 40 minutes to cook.

Whilst turkey is cooking, in a bowl, toss potatoes, carrots, parsnips in oil and season to taste.

When cooking is complete, remove probe and remove turkey from pot, cover loosely with foil and allow to rest for 30 minutes. Drain off juices for gravy and wipe out pot.

Add water to bottom of pot. Add vegetables to basket and place in pot. Close the lid and select STEAM ROAST, set temperature to 200˚C, set time to 20 minutes. Select START/STOP to begin, (the display will show PRE for approximately 7 minutes as the unit steams, then the timer will start counting down). Add sprouts to oil and toss to coat. After 12 minutes, open lid and add Brussels sprouts and pigs in blankets to basket. Potatoes may need to be browned for 5 minutes on AIR FRY set temperature to 210˚C for 5-10 minutes to crisp up.

When cooking is complete, carefully remove the basket and serve vegetables with turkey.
