Roasted Aubergine & Za’atar Dip
This delicious recipe for roasted aubergine & za’atar dip is so creamy, rich and flavoursome. Serve with toasted pitta bread, oat crackers or carrot sticks for a mouthwatering snack or dollop some of the dip on top of a salad for something special.

- 1 aubergine
- 2 tbsp tahini
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves of garlic
- 1 tsp za'atar
- 1/2 tsp ground cumin
- A pinch salt

Step 1
Pre-heat the oven to 180 degrees.

Step 2
Cut the aubergine in half, lengthways and place onto a baking tray with a drizzle of olive oil. Bake for 30 minutes or until soft. Allow to cool.

Step 3
Once the aubergine is cool, scrape the flesh from the skin and place into your food processor.

Step 4
Add the remaining ingredients and blend until smooth, adding a dash more olive oil if needed.
