Salted Date Caramel Buttercups
A salted date caramel made from dates and peanut butter covered in rich dark chocolate. These gorgeous delights couldn’t be easier to make, so whip up a batch and have them waiting for you in your fridge or freezerin moments of need.

Cooking mode

- 200g medjool dates(pitted)
- 100g smooth peanut butter
- 1/2 tsp salt
- 500g dark chocolate
- 12 muffin cases

Step 1
Begin by melting the chocolate in the microwave for 3 minutes giving it a stir every 30 seconds.

Add 1 tablespoon of the melted chocolate to each muffin case and place in the freezer for 10 minutes to set.

Add the dates, peanut butter and salt to the ninja and blend until a smooth paste is formed. You may need to scrape the sides down a couple of times.

Take the muffin cases out of the freezer and add a teaspoon of the salted date caramel mixture to the middle of each case.

Step 5
Cover with the remaining melted chocolate and place back in the freezer for 15 minutes to set.

Allow to warm up for 10 minutes before serving with a pinch of salt.
