Ingredients

  • 2 x 300g aubergines, cut in half lengthways
  • 2-3 tbsp rapeseed oil
  • 2 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp granulated sugar
  • 1 spring onion, sliced finely
  • 1 tsp sesame seeds

Method

  • Step 1

    To install the grill plate, position it flat on top of the heating element and gently press down until it sits into place, then close the lid. Turn dial to GRILL set temperature to MED and set time to 10 minutes. Press START/STOP to begin preheating (IGN and preheating will take approx. 6 minutes).

  • Step 2

    While the unit is preheating, prepare the aubergine. Cut diagonally across the cut side of aubergine to form a crisscross pattern and then brush the cut side with rapeseed oil, making sure the oil soaks into the aubergine. Set aside. 

  • Step 3

    In a small bowl, prepare the miso dressing by whisking together the white miso paste, mirin, sake, and sugar.

  • Step 4

    When unit beeps to signify it has preheated and ADD FOOD is displayed, open lid and place the aubergine cut side down onto the grill plate. Close lid to begin cooking.

  • Step 5

    When unit beeps and the display reads FLIP, open lid, use silicone-tipped tongs to flip aubergine. Close lid to continue cooking. After 9 minutes, open lid, brush cut side of aubergine with miso dressing. Close lid to continue cooking.

  • Step 6

    When cooking is complete, open lid and remove aubergine from grill and place on platter. Garnish with spring onions and sesame seeds and serve immediately.
