Spiced Tomato, Lentil & Carrot Soup with Halloumi Croutons

A nutritious soup that makes for a delicious light lunch. The chewy and salty Halloumi croutons take this simple soup to another level.

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 2 tbsp Olive Oil
  • 1 Onion, diced
  • 4 cloves Garlic, crushed
  • 4 large Tomatoes, chopped into halves
  • 100g Red Lentils
  • 2 Carrots, peeled and chopped into rounds
  • 500ml Vegetable Stock
  • 1/2 tsp Cumin Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Cayenne Pepper
  • Salt & Pepper
  • 225g Halloumi, cut into cubes

Utensils

  • Step 1

    Add Oil, Onion and Garlic to Soup Maker and select Saute.

  • Step 2

    Add the remaining ingredients aside from the Halloumi and press the smooth soup button.

  • Step 3

    Heat a dry pan over a medium heat, then add the Halloumi. Allow to brown for 1 – 2 minutes per side.

  • Step 4

    Pour soup into bowls and add some Halloumi to each one.
