For the base

  • 120g ground almonds
  • 80g oats
  • 8 medjool dates
  • 2 tbsp smooth peanut butter
  • 1 tbsp coconut oil

For the filling

  • 100g tahini
  • 6 medjool dates
  • 3 tbsp coconut oil (melted)
  • A pinch salt

For the topping

  • 200g dark chocolate
  • 1 tsp tahini

Utensils

  • Step 1

To make the base, place the oats in your food processor and blitz until a smooth flour forms. Then add the ground almonds, pitted dates, peanut butter and coconut oil and blend again into a mixture that sticks together.

  • Step 2

Line a tray with baking paper. Place the base mixture into the tray and press down until compact. Place into the freezer while you make the filling.

  • Step 3

To make the filling, simply add all the ingredients to your food processor and blend on high until smooth.

  • Step 4

Pour the filling mixture over the base, making sure it’s spread evenly. Place back into the freezer for 45 minutes.

  • Step 5

Once the filling has set, melt the dark chocolate gently in a bain-marie then pour over the filling. Place into the fridge for 2-3 hours or until the chocolate is set.

  • Step 6

Remove from the fridge 5 minutes before cutting into squares and serving.
