Biscoff & Date Brownies
A quick and lazy way of making brownies is to use a helping hand from your blender. These brownies are gooey and moist. Just how every brownie should be.

- 6 medjool date (pits removed and cut into chunks)
- 200g melted dark chocolate
- 180g biscoff spread
- 380ml oat milk (at room temperature)
- 1 tbsp coffee granules/espresso powder
- 200g plain flour
- 50g cacao powder
- 60g light brown sugar
- 30g lotus biscuits

Step 1
Begin by preheating the oven to 180c. To the blender add the dates, melted dark chocolate, 90g biscoff spread, room temperature oat milk and coffee granules. Blend for 5 or so seconds until everything is combined.

Next add the flour, cacao powder and light brown sugar. Blend until combined.

Grease or line a rectangular baking tin and empty the mixture into the tin.

Place the remaining 90g of biscoff spread in the microwave for 30 seconds until runny and then drizzle it over the brownie batter in lines.

Use a knife to make lines in the opposite direction, and then make lines in the same direction. This will create the marbled effect.

Bake in the oven for 25 minutes before allowing to cool for 15 minutes.

Meanwhile blend the lotus biscuits in the blender into crumbs.

Remove the brownies from the tin, slice and cover in the biscuit crumbs. Enjoy.
