White Chocolate & Cranberry Bites

A delicious treat with a festive twist. These white chocolate and cranberry bites are full of flavours to leave the whole family wanting more!

Utensils required

Ingredients

For the flapjacks

  • 150g rolled oats
  • 3 tbsp chia seeds
  • 1 tsp ground ginger (optional)
  • 1 tsp cinnamon
  • 3 tbsp coconut oil
  • 100g dates, soaked in boiling water for 10 minutes
  • 3 tbsp smooth or crunchy peanut butter
  • 6 tbsp maple syrup
  • 75g dried cranberries

For the topping

  • 2 tbsp coconut oil
  • 75g white chocolate (can be vegan)
  • Handful cacao nibs

Method

  • Step 1

    Mix together the oats, chia seeds, ginger and cinnamon in a bowl

  • Step 2

    Gently melt the coconut oil, nut butter and maple syrup. Allow to cool slightly, then tip into your Ninja Kitchen Nutri Ninja with the drained dates and blend well. Pour into the bowl with the dry ingredients and mix together well. Stir in the dried cranberries

  • Step 3

    Tip into a lined tin or tub then press down evenly

  • Step 4

    Gently melt the coconut oil and white chocolate and pour over the top to cover. Scatter over cacao nibs then chill in the fridge for at least 3 hours to set

  • Step 5

    When ready, pop out of the fridge, cut into bars or pieces, and enjoy!
