Veggie Sausages with Mixed Potato Mash
TIP: Use any combination of root vegetables you prefer in the mash. Carrot and celeriac also work well.

LEVEL 1 (Combi Pan)
- 500g Maris Piper potatoes peeled, cut into 2cm cubes
- 500g sweet potatoes, peeled, cut into 2cm cubes
- 250ml milk
- ½ tsp salt
- 75g butter (or vegan alternative), cubed
LEVEL 2 (Bake Tray)
- 16 vegetarian (or vegan) frozen sausages
- 2 large red peppers, deseeded, cut into thick strips
- 2 large red onions, peeled, cut into 8 wedges
- 2 tbsp olive oil
- Salt and ground black pepper, as desired

Step 1
Place potatoes, milk and salt in the Combi Pan and stir to combine. Slide the pan into Level 1.

Step 2
In a large mixing bowl toss sausages, red pepper, red onion with oil and season, as desired. Then place on Bake Tray. Slide the tray into Level 2.

Step 3
Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 190°C and set time to 15 minutes. Press START/STOP to begin cooking (the unit will steam for 8 minutes before cooking).

Step 4
When cooking is complete, remove the pan, roughly mash the vegetables using a non-metallic potato masher or the back of a wooden spoon or spatula. Stir in butter, salt and pepper, as desired until combined.

Serve potato mash with sausages, peppers and red onions.
