Easy Blender Banana Muffins
I have been making these banana muffins with the kids for many years but have recently changed some of the ingredients to make them a little healthier. Luckily the kids didn’t notice and loved them anyway.

- 1 Egg
- 1/2 tsp Vanilla Extract
- 55g Coconut Sugar
- 1 very ripe Banana
- 55ml Oil (not a strong flavoured one) - any vegetable or sunflower oil
- 85g Spelt Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Bicarbonate of Soda
- 1 tsp ground Cinnamon
- 1 tsp ground Ginger

Step 1
Preheat oven to 180 C/Gas Mark 4.

Step 2
Line a muffin tin with 12 cupcake cases.

Add the egg and sugar to the blender and blend to combine.

Add the vanilla and banana and blend a little more.

Step 5
Pour in the oil and add the flour, baking powder, bicarbonate of soda, cinnamon and ginger and blend until completely combined.

Spoon into cupcake cases. About 2 tbsp per cupcake.

Bake for 12 – 14 minutes until baked through.
