Minestrone Soup

This is a hearty warming meal with plenty of Vegetables and Orzo. The Orzo can be replaced with Macaroni if you prefer.

Ingredients

  • 3 tbsp Olive Oil
  • 1 small Onion, diced
  • 3 cloves Garlic, crushed
  • 1 Celery Stalk, chopped
  • 1 medium carrot , peeled and chopped
  • 1 tsp dry Oregano
  • 1 tsp dry Thyme
  • 2 tins Chopped Tomatoes, pureed (800g)
  • 1 Bay Leaf
  • 1l Vegetable Stock
  • 100g Orzo
  • Handful Baby Spinach, chopped
  • 3-4 tbsp Parmesan, grated
  • Fresh parsley, chopped (To serve)
  • Salt and Pepper

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

Method

  • Step 1

    Select Saute and once ready, add Olive Oil.

  • Step 2

    Add Onions and Garlic, Then saute for 2 – 3 minutes.

  • Step 3

    Add the Carrots, Celery, Oregano, Thyme, Tomatoes, Bay leaf, Vegetable Stock and Orzo.

  • Step 4

    Press Cancel then close the lid.

  • Step 5

    Select Manual and set on high for 2 minutes.

  • Step 6

    Turn the valve to seal.

  • Step 7

    Once ready, do a quick release by carefully turning the valve to release pressure.

  • Step 8

    Press the saute button and cook for another 5 minutes, or until the pasta is cooked.

  • Step 9

    Season with Salt and Pepper if needed.
