Jewelled Rice

Vibrant, fragrant Basmati rice is cooked in stock and topped with pomegranate, almonds and raisins. We usually serve this rice with a roast chicken on top. You can add pre soaked saffron to the rice too, to make the rice even more vibrant!

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 2 tbsp ghee or oil
  • 1 small red onion (diced)
  • ½ garlic clove (crushed)
  • 450g basmati rice (soaked)
  • ¼ tsp dried parsley
  • ⅛ tsp cinnamon
  • 470g chicken stock
  • To taste salt

For the toppings

  • 2 tbsp flaked almonds toasted in a dry pan for a minute
  • 2 tbsp pomegranate arils
  • 2 tbsp golden raisins soaked in boiling water

Utensils

  • Step 1

    Wash the soaked rice

  • Step 2

    Press Saute to pre-heat the Ninja Foodi Multi-Cooker

  • Step 3

    Add the oil/ghee

  • Step 4

    Saute the onion for 7 – 8 minutes until golden before adding the garlic. Saute for a further minute

  • Step 5

    Add the rice, parsley, cinnamon, stock and salt if needed

  • Step 6

    Close the lid of the pressure cooker and close the valve to seal. Pressure cook on high for 4 minutes

  • Step 7

    Naturally release the pressure for 10 minutes

  • Step 8

    Open lid and stir in the flaked almonds, pomegranate and golden raisins minus the water. Once well combined it’s ready to serve
