Orzo with Nduja, Spinach & Mushrooms

An easy one pot recipe for a delicious and quick dinner.

Cooking mode

  • 1 cup orzo
  • 1 tbsp olive oil
  • 2 cups vegetable stock
  • 1/2 onion, finely diced
  • 1 garlic clove, thinly sliced
  • 150g chestnut mushrooms, sliced
  • 75g nduja sausage, diced
  • 150g washed baby spinach
  • 1/4 Juice and zest from a lemon
  • Salt and pepper to season
  • Chopped parsley

Utensils

  • Step 1

    Place the orzo in the pot and add the olive oil to it. Using a wooden or plastic spoon stir the orzo to make sure it is evenly coated in the olive oil – this will prevent the orzo from sticking together and will add more flavour.

  • Step 2

    Add the onions, garlic, sliced mushrooms, season with salt and pepper and pour the stock over the rest of the ingredients.

  • Step 3

    Mix all the ingredients using a plastic or wooden spoon , close the lid and select the steam meals function. Set the timer for 5 mins and press start.

  • Step 4

    The unit will start building steam for approximately 5 minutes and then the cooking process will start.

  • Step 5

    Once the timer has finished open the lid and and add the spinach, lemon and the diced nduja. Give everything a quick mix and close the lid.

  • Step 6

    Rest for 2-3 minutes then served garnished with freshly chopped parsley.
