Lemon & Parmesan Orzo

Ingredients
- 30g Butter
- 1 tbsp Oil
- 1 medium Onion, diced
- Salt
- 1 Zest of Lemon
- 1/4 tsp Black Pepper
- 250g Orzo
- 625ml Chicken Stock or Water
- 90g Parmesan, grated
- 2 tbsp Lemon Juice

Method

Step 1
Select Saute and add Butter, Oil, Onion and Salt.

Saute for 3 minutes.

Then add Lemon zest, Pepper and Orzo.

Select Cancel and pour in Stock or Water.

Set the valve to seal and pressure cook on high for 5 minutes. Do a quick release by carefully moving the valve to vent.

Step 6
Sprinkle over the Parmesan and pour in the Lemon Juice. Mix through with a wooden spoon.
