Banana Loaf
Use up leftover Bananas to make this delicious Banana Loaf with Chocolate and Walnuts.

- 4 Eggs
- 100g Muscavado Sugar
- 3 very ripe Bananas, mashed
- 150 ml Oil (Vegetable or Olive)
- 275g Self Raising Flour
- 1 tsp Baking Powder
- 40g Walnuts, chopped
- 40g Chocolate, chopped
- 2 tbsp Demerera Sugar
Utensils

Step 1
Beat Eggs and Muscavado Sugar in a stand mixer or with a whisk till pale.

Add the Bananas and Veg Oil and whisk until combined.

Stir in the Flour, Baking Powder, Walnuts and Chocolate.

Step 4
Pour into a loaf tin (1lb) or foil container of the same size.

Step 5
Sprinkle over the Demerera Sugar.

Bake at 140C for 35 minutes.
