Berry Cheesecake Bars

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!
For the base
- 150g rolled oats
- 2 tbsp coconut oil
- 4 tbsp almond butter
- 4 tbsp maple syrup
- 6 tbsp no added sugar berry jam
For the cheesecake part
- 300g soft cheese
- 2 eggs
- 100g sweetener
- 2 tbsp cornflour
- 1 tbsp vanilla extract
- 100g frozen berries

Step 1
Preheat the oven to 170C and grease and line a 9x9in baking tin.

Place the oats in a bowl. Melt the coconut oil, nut butter and maple syrup then pour in and mix well to combine.

Tip this into the prepared tin and press down well. Spread the jam over to cover in one even layer then set aside.

Place the soft cheese, eggs, sweetener, cornflour and vanilla into your Ninja Kitchen food processor and blend until smooth, then pour over the base. Scatter over the frozen berries then bake for 25-30 minutes until firm and golden. Leave to cool then chill in the fridge for 30 minutes.

Remove from the tin, slice into 12 bars then enjoy! Keep in the fridge.
