This are a perfect breakfast for people on the go, packed with healthy carbohydrates from the oats and fruits. This recipe is refined sugar free and can easily be adapted to a gluten-free diet by switching to gluten-free oats. This recipe makes 4 large muffins.

- 120g oat flour (ground oats and sieve)
- 1 tsp baking powder
- Pinch of salt
- 2 eggs
- 15ml olive oil
- 1 tsp vanilla extract
- 60ml maple syrup
- 35g fat free yoghurt
- 75g blueberries
- 75g raspberries

Step 1
Begin by preheating the Ninja Food Multi-cooker.

Using the bowl of your Ninja Kitchen Food processor with the dough blade add all of the dry ingredients and pulse for about 30 seconds to combine the oat flour, baking powder and salt.

Add the remaining ingredients and select low for approximately 60 seconds to form the muffin batter.

Place the batter directly in the muffins tins and sprinkle some oats (optional) place the muffin tins inside the Ninja multi cooker and select bake for approximately 20-25 minutes.

Pierce the muffins to check they have baked through, remove from the Foodi and allow the muffins to cool.
