Cajun BBQ Ribs with Rice & Beans

LEVEL 1 (Combi Pan)

  • 400g easy cook long grain rice
  • 415ml water or stock
  • 1 green pepper, deseeded and cut into strips
  • 1 red pepper, deseeded and cut into strips
  • 1 red onion, peeled, cut into eights
  • 1 x 400g tin kidney beans
  • 1 tbsp Cajun seasoning

LEVEL 2 (Bake Tray)

  • 2 x 550g pork rib racks, cut in half
  • 4 tbsp Cajun seasoning
  • 225g barbecue sauce, plus extra to baste
  • 200ml apple juice
  • 1 tbsp oil

  • Step 1

    Place all Level 1 ingredients in the Combi Pan and stir to combine. Slide the pan into Level 1. 

  • Step 2

    Coat the pork rib racks evenly in Cajun seasoning and set to one side.  

  • Step 3

    In a large bowl, mix 225g barbecue sauce, apple juice, and oil together. Place pork rib racks in mixture and evenly cover in sauce, allow to sit for 30 minutes to 1 hour. 

  • Step 4

    Transfer 1½ tablespoons of the marinade to the Bake Tray, then place the pork onto the tray, meat side down. Slide the tray into Level 2. 

  • Step 5

    Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 180°C and set time to 22 minutes. Press START/STOP to begin cooking (the unit will steam for 9 minutes before cooking). 

  • Step 6

    When 9 minutes cook time remains, flip and baste each rib rack half with roughly 1 tablespoon barbecue sauce. Close door and continue cooking.  

  • Step 7

    When cooking is complete, remove tray and pan. Stir and fluff the rice then serve with pork ribs.
