Cheese & Bean Quesadillas

Ingredients

  • 1/2 tbsp olive oil
  • 4 spring onions, finely chopped
  • 1 red pepper
  • 1 x 400g tin of black beans, drained and rinsed
  • 2 tbsp tomato puree
  • 4 tbsp water
  • A pinch salt
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 liquid aminos (optional)
  • 4 gluten free tortillas
  • 120g cheddar cheese

Method

  • Step 1

    Heat the oil in a frying pan on a medium heat

  • Step 2

    Add the spring onion and pepper, frying for 2minutes

  • Step 3

    Stir in the beans, tomato puree, water, salt, cumin, paprika and aminos

  • Step 4

    Mash some of the beans while cooking for a further 2-3 minutes until you are left with a thick mixture

  • Step 5

    Divide the bean mixture between the 4 tortillas, spreading it only on half of each tortilla

  • Step 6

    Leave a 1cm gap around the edge of the filling

  • Step 7

    Grate the cheese over the beans

  • Step 8

    Fold over the other side of the tortillas, gently pressing down

  • Step 9

    Place the grill rack in the foodi

  • Step 10

    Set the foodi to the air fryer option at 180oc for 3 minutes each side, individually

  • Step 11

    Option: serve with salsa for dipping, and sprinkle over fresh coriander and chilli flakes
