Step 1
Cut the baby potatoes into quarters and place in a bowl, drizzle over olive oil and season with garlic granules, Italian seasoning, paprika, salt and pepper
Step 2
Mix the potatoes with the seasoning and place in the 1st Ninja Dual Zone Air Fryer drawer along with 3 thyme sprigs and the diced pancetta
Step 3
In a shallow dish place flour. In another shallow dish place the whisked eggs and in the last shallow dish place the panko breadcrumbs
Step 4
Slice each chicken breast into mini fillets, coat the chicken with the flour, followed by the egg and follow by coating the fillet with the panko breadcrumbs
Step 5
Place the fillets in the Ninja Dual Zone Air Fryer drawer 2
Step 6
Turn the Dual Zone Air Fryer ON. Select drawer 1, ROAST at 180 degrees for 25 minutes. Select drawer 2, AIR FRY at 200 degrees for 15 minutes. Select SYNC followed by START
Step 7
Half way through cooking open drawer 1 and mix/shake the potatoes. Follow by opening drawer 2 and flip each chicken tender
Step 8
Once both drawers have completed, check the potatoes and chicken are cooked to your liking and adjust the cooking method to suit

The Mediterranean roasted vegetables are optional. If you wish to include them, place them in a Air Fryer drawer, select ROAST at 210 degrees for 20 minutes, select START
