Double Veal Ribs with Caramelized Turnips

Tip: Ask your butcher for 2 veal ribs with the same thickness.

Tip2: poor the juice of the meat from the aluminum foil into the pot to flavor the sauce a little more.

Ingredients

  • 200ml + 150ml water separated
  • 7g + 7g + 30g butter separated
  • Seasoning (salt + pepper at wish)
  • 2 Veal ribs of 700g each
  • 100ml soy sauce
  • 1kg turnips, peeled and cubed (4cm)
  • 2 branches of fresh thyme
  • 2 bay leaves
  • 2 tbsp honey

Method

  • Step 1

    Preheat the Foodi with 200ml water, select SEAR/SAUTÉ and set to HIGH. Select START/STOP to begin.

  • Step 2

    Season both ribs with salt and pepper at wish and set aside at room temperature. 

  • Step 3

    When the water is boiling, remove it from the pot and place 7g butter to melt.  

  • Step 4

    Once butter is melted, color the first rib 4 minutes on both sides and 1 minute on the back. Set aside wrapped up in aluminum foil.  

  • Step 5

    Add 7g butter in the pot and proceed in the same way with the second veal rib. 

  • Step 6

    Deglaze the pot with the soy sauce and add 150ml water with the turnips and the herbs.

  • Step 7

    Assemble the pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set to HIGH. Set time to 1 minute. Select START/STOP to begin. 

  • Step 8

    When pressure cooking is complete, quick release the pressure by moving the pressure release valve to the VENT position. Carefully remove lid when unit has finished releasing pressure.  

  • Step 9

    Drain Turnips and keep 100ml juice in the pot. Add 30g butter and the honey.  

  • Step 10

    Stir the turnips back in the pot and set the Foodi on grill at 240°C for 7 minutes. Select START/STOP to begin. 

  • Step 11

    Meanwhile remove aluminum foil and place the veal ribs on the 2-tier cooking rack.  

  • Step 12

    Place them over the turnips in the pot and let cook them for 5 minutes and each side. 

  • Step 13

    Than exchange both veal ribs position and let the second cook the same way: 5 Minutes on each side. 

  • Step 14

    Leave the veal ribs to rest 3 minutes on the side while placing the turnips in a serving dish.

  • Step 15

    Slice the meat before serving with the extra sauce on the side.
