Gnocchi in Tomato Sauce

Ingredients for the sauce

  • 1 kg juicy tomatoes
  • 2 tbsp olive oil
  • 1 shallot
  • 1/2 cup fresh basil
  • 2 cloves of garlic
  • 1/2 cup coconut cream
  • To taste salt and pepper

For homemade gnocchi

  • 500g cooked potatoes
  • 200g four
  • 1 tbsp soft vegan butter
  • 1/2 tsp salt

Method

  • Step 1

    To make the sauce, peel the tomatoes and together with onion, garlic , basil, olive, salt & pepper place them in the food processor and pulse for 30 s.

  • Step 2

    Remove blender mix to a small pot. Set on small heat and cook for about 20’min remembering to steer occasionally. *tip if your sauce is to thick add a little of water to thin it a bit

  • Step 3

    In the mean time prepare home made gnocchi. Sift 150g of flour into the board, add potatoes, salt and butter. Knead for couple of minutes until the dough is smooth. If your dough gets very sticky, sprinkle a bit more flour.

  • Step 4

    Place 1/4 of dough on the floured surface and roll with your hands into a long roll about 2cm thick. Cut them about 2cm long. Repeat with the rest of the dough

  • Step 5

    Bring a large pot of water with 1tsp of salt to a boil.

  • Step 6

    Add gnocchi and cook for about 2-3 min.

  • Step 7

    While they cook, finish off the sauce with adding coconut cream.

  • Step 8

    Stir in the gnocchi to the sauce.

  • Step 9

    Serve with vegan cheese and garnish with fresh basil
