Homemade Carrot & Tumeric Soup

Autumn is here; this soup fits this season perfectly. This delicious soup is packed with delicious turmeric and fresh coriander. This soup is very simple to make and only needs a selection of simple ingredients.

Utensils required


  • 1 tbsp Olive oil
  • 1 medium Onion (chopped)
  • 2 Garlic cloves
  • ¼ tsp Turmeric powder
  • 500g Carrots (peeled and chopped)
  • 1.2 litres Vegetable stock
  • A handful Fresh coriander
  • To taste Salt and pepper

Cooking mode

  • Step 1

    Heat 1 tbsp olive oil in a large pan, add the chopped onion, crushed garlic, then fry for 5 minutes until softened

  • Step 2

    Stir in the turmeric powder and the chopped carrots – add the vegetable stock along with salt and pepper to taste, bring it to a boil then reduce the temperature

  • Step 3

    Cover and cook for approximately 18-20 minutes until the carrots are tender

  • Step 4

    Put to one side and allow to cool to room temperature

  • Step 5

    Pour the ingredients into the jug of your Ninja Kitchen blender, add fresh coriander and blitz until smooth – adjust seasoning if needed

  • Step 6

    Pour back into a pan and heat through until warm
