Lemon, Blueberry Glazed Donuts

Cooking mode

For the donuts

  • 100g gluten-free flour
  • 100g ground almonds
  • 100g sweetener
  • 1 tsp baking powder
  • 2 tbsp melted coconut oil
  • 150ml plant milk
  • 75g frozen blueberries
  • 1 Zest of lemon

For the glaze

  • 4 tbsp icing sugar
  • 1 tbsp lemon juice

Utensils

  • Step 1

    Preheat the oven to 180C and lightly grease a 6-hole donut tin.

  • Step 2

    Place the flour, almonds, sweetener, baking powder, oil and milk in your Ninja Kitchen food processor and blend to form a batter. Gently fold in the zest and berries, then divide the mixture between the donut holes to fill to the top.

  • Step 3

    Bake for 20 minutes until risen, golden and firmed up. Leave to cool, then pop out on a wire rack.

  • Step 4

    Whisk together the icing sugar and lemon juice until slightly thick then spoon over each donut, Allow to set then enjoy!
