Lemon, Honey, and Thyme Sorbet

This Lemon, Honey, and Thyme Sorbet is made with 5 simple, unprocessed ingredients for the perfect guilt-free treat. Vegan substitutions available.

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 165g freshly squeezed lemon juice (roughly 3 1/2 lemons)
  • 1 lemon, zest only
  • 175ml water, plus extra
  • 150g raw honey (or use vegan honey alternative)
  • Few sprigs thyme

Utensils

  • Step 1

    In a small heavy-bottomed pan add all of the ingredients and stir.

  • Step 2

    Place on a medium heat, stir occasionally, bring to boil and turn off and remove from the heat. Leave to infuse until cooled, about 45 minutes.

  • Step 3

    Strain the mixture through a fine-meshed sieve and pour into the ice cream tub, top up to the fill line with additonal cold water. Secure with the lid and freeze for 24 hours.

  • Step 4

    Once sorbet is frozen, remove tub from freezer, remove lid, then place tub in outer bowl. Install paddle into outer bowl lid and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 5

    Select SORBET. Once the program has finished, serve immediately.
