Orzo with Nduja, Spinach & Mushrooms
An easy one pot recipe for a delicious and quick dinner.

- 1 cup orzo
- 1 tbsp olive oil
- 2 cups vegetable stock
- 1/2 onion, finely diced
- 1 garlic clove, thinly sliced
- 150g chestnut mushrooms, sliced
- 75g nduja sausage, diced
- 150g washed baby spinach
- 1/4 Juice and zest from a lemon
- Salt and pepper to season
- Chopped parsley
Utensils
- 
								Step 1Place the orzo in the pot and add the olive oil to it. Using a wooden or plastic spoon stir the orzo to make sure it is evenly coated in the olive oil – this will prevent the orzo from sticking together and will add more flavour.

								Step 2Add the onions, garlic, sliced mushrooms, season with salt and pepper and pour the stock over the rest of the ingredients. 
- 
								Step 3Mix all the ingredients using a plastic or wooden spoon , close the lid and select the steam meals function. Set the timer for 5 mins and press start. 
- 
								Step 4The unit will start building steam for approximately 5 minutes and then the cooking process will start. 
- 
								Step 5Once the timer has finished open the lid and and add the spinach, lemon and the diced nduja. Give everything a quick mix and close the lid. 
- 
								Step 6Rest for 2-3 minutes then served garnished with freshly chopped parsley.
