Raw Vegan Bounty Slices

Coconut lovers rejoice! If you love bounty bars but wish they were healthier then these Raw Vegan Bounty Slices are what you need. Packed with healthy fats and no processed sugar in sight.

Ingredients

  • 115g desiccated coconut
  • 60ml light agave nectar
  • 60ml water
  • 50g coconut manna/butter
  • 1 tsp vanilla extract
  • Pinch sea salt flakes
  • 100g dark chocolate (85% cacao solids or above)

Method

  • Step 1

    Grease and line a small brownie tin (I used an 8.5″ x 6.5″ tin) with greaseproof paper, be sure to leave enough excess so that you can lift the brownies out. Alternatively, use a loose based tin.

  • Step 2

    Place the desiccated coconut into a medium sized mixing bowl and set to one side. Place all of the ingredients except for the dark chocolate into the Ninja cup and select MAX BLEND. Once the programme has finished running pour over the desiccated coconut and stir to combine.

  • Step 3

    Transfer the mixture to the lined tin and press down firmly until evenly distributed. Place into the freezer for 10 minutes.

  • Step 4

    Melt the chocolate over a bain marie on a low heat. Once melted remove the tin from the freezer and pour over the coconut mixture. Return to the freezer for 20 minutes or until firm.

  • Step 5

    Remove from the freezer and remove the set mixture from the tin. Using a clean knife slice into 8 equal rectangles, wiping the knife between cuts. Store in the refrigerator in an airtight container for up to 5 days.
