Spicy Roast Spatchcock Chicken

- 2.2kg whole chicken
- Zest and juice of 1 lemon
- 2 tsp rose harissa
- 1 tbsp vegetable oil
- Flaked sea salt and ground black pepper, as desired

Step 1
Place chicken, breast side down on a large chopping board. With a pair of poultry shears or scissors remove the backbone. Turn chicken over and press down on breast to flatten. Trim off any excess skin.

In a small bowl, mix lemon zest, juice, harissa and oil. Brush mixture all over chicken and season as desired.

Insert both crisper plates into the drawer. Place chicken breast side down, in the centre, of crisper plates. Insert drawer into unit.

Step 4
Select MEGAZONE, select ROAST, set temperature to 190°C and set time to 35 minutes. Press START/STOP to begin cooking.

When 20 minutes remain, open drawer and flip chicken. Close drawer to continue cooking.

Step 6
Cooking is complete when chicken reach an internal temperature of 75˚C. Leave to rest for 10 minutes before serving.
