Sweet Potato Patties
If you’re after a way to jazz up the humble sweet potato, then this recipe is for you!
These sweet potato patties are super simple and easy to make but are full of flavour, goodness and perfect with a side salad, fish or veggie sausages.

- 500g sweet potato (peeled and chopped into cubes)
- 100g gluten free flour
- 2 garlic cloves
- 6g fresh parsley
- 1 tsp paprika
- 1/2 tsp chilli flakes
- salt and pepper
- 1 tbsp olive oil

Step 1
Bring a saucepan over water to the boil. Add the sweet potato chunks and cook for 12-15 minutes or until soft enough to easily poke a knife through

Once cooked, drain the sweet potato and allow to cool

Add the cooled sweet potato to your food processor and blend using the puree setting

Add the remaining ingredients to the food processor, apart from the olive oil. Blend until well combined. Add more flour if the mixture still seems a bit wet

Add the olive oil to a frying pan over a medium heat and allow to warm

Using your hands, shape the sweet potato mixture into patties. Place the patties into the pan

Cook for 3-4 minutes before flipping and cooking on the other side

Serve immediately or keep in the fridge and consume within 2 days. Can be eaten cold or reheated!
