Veggie Bangers with Butter Bean Herby Mash

LEVEL 1 (Combi Pan)
- 600g Maris Piper potatoes, peeled, cut into 2cm cubes
- 400g tinned butter beans, rinsed and drained
- 250ml whole milk
- 1 tbsp finely chopped sage leaves
- 1 tbsp finely chopped rosemary
- 1 tbsp finely chopped thyme leaves
- 2 garlic cloves, peeled, crushed
- 1/2 tsp ground nutmeg
- 50g butter, cubed
- 2 tbsp double cream
- Sea salt and pepper, as desired
LEVEL 2 (Bake Tray)
- 16 frozen vegan or veggie sausages
- 150g Tenderstem® broccoli, trimmed and halved
- 2 red onions, cut into 8 wedges each
- 1 red pepper, cut into 8 strips
- 1 yellow pepper, cut into 8 strips
- 2 tbsp olive oil
- Sea salt and ground black pepper, as desired
- Gravy, to serve

Step 1
Add into the Combi Pan, the potatoes, butter beans, milk, herbs, garlic, nutmeg and stir to combine. Slide the pan into Level 1.

Step 2
Into a large bowl, add the Level 2 ingredients and toss to coat. Transfer to the bake tray. Slide the tray into Level 2.

Step 3
Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 190°C and set time to 15 minutes. Press START/STOP to begin cooking (the unit will steam for 9 minutes before cooking).

Step 4
Once cooking is complete, remove tray and pan.

Using a silicone potato masher mash the potatoes until smooth then stir in the remaining ingredients and season as desired.

Serve immediately with gravy, if desired.
