Pork Meatballs with Coconut Curry Rice

Cooking mode

LEVEL 1 (Combi Pan)

  • 950ml vegetable stock
  • 500ml tinned coconut milk
  • 300g basmati rice, rinsed and drained
  • 150g frozen shredded coconut
  • 2 tbsp coconut sugar
  • 1 tbsp finely grated ginger
  • 2 tbsp curry powder
  • 1 tbsp curry leaves
  • 1 cinnamon stick
  • 4 green cardamom pods, crushed
  • 2 star anise
  • 1 garlic clove, peeled, crushed
  • 1 red chilli, finely sliced
  • 175g broccoli florets
  • 200g fine green beans, halved
  • Lime juice, as desired
  • Salt and pepper, as desired

LEVEL 2 (Bake Tray)

  • 1kg pork mince
  • 2 large eggs
  • 4 tbsp fresh coriander, finely chopped
  • 3 garlic cloves, peeled, minced
  • Zest of 1 lime
  • 2 tbsp cooking sake
  • 2 tbsp rice wine vinegar
  • 2 tbsp light soy sauce
  • 1 tbsp finely grated ginger
  • 1 tbsp coconut sugar
  • 2 tsp sesame oil
  • 1 tsp curry powder
  • 1/2 tsp white pepper
  • Cooking spray, as needed

Utensils

  • Large bowl
  • Step 1

    In a large bowl, combine the ingredients for the meat balls. Once combined divide into 30 evenly sized meatballs. 

  • Step 2

    Spray the Bake Tray with cooking spray then line with parchment. Evenly distribute the meatballs. Spray meatballs with cooking spray. Slide the tray into Level 2.

  • Step 3

    Place all Level 1 ingredients, except for the broccoli, green beans, lime juice, and salt and pepper, in the Combi Pan and stir to combine. Slide the pan into Level 1.

  • Step 4

    Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 175°C and set time to 15 minutes. Press START/STOP to begin cooking (the unit will steam for 10 minutes before cooking). 

  • Step 5

    Halfway through cooking add the vegetables to rice and stir. 

  • Step 6

    When cooking is complete, remove tray and pan. Pour the juices from the meatballs into the rice and stir to combine. Season with lime juice, salt, and pepper, as desired

  • Step 7

    Serve curried rice with meatballs immediately. Garnish with sweet chilli sauce, crushed roasted peanuts, coriander and lime wedges, if desired.
