Veggie Tomato Sauce

- 1 garlic clove, peeled
- 1 large onion, peeled and cut into 8
- 2 sticks celery, cut into 3
- 2 carrots, cut in half
- 1 red pepper, deseeded and cut in quarters
- 400g plum tomatoes
- tsp sugar
- 1 tbsp tomato puree
- 1 tsp dried oregano
- salt and freshly ground black pepper
- 1 bayleaf

Step 1
Place all the ingredients into the 2.1l jug in the order listed, except for the bayleaf.

Press HIGH and blend for 30-40 seconds or until desired smoothness is reached.

Pour into a saucepan, add bay leaf and simmer with a lid on for 25 minutes or until thick.
