Festive Banana Bread
A quick and easy Christmas themed banana bread. Quick to make by simply adding the ingredients directly inside the jug of your Ninja Kitchen food processor. You can adapt this recipe to plant-based by switching to a flax egg.

- 4 ripe bananas (280g)
- 100g light brown sugar
- 75g butter
- 1 egg
- 185g self-raising flour
- 60g dried cranberries extra to sprinkle
- 100g walnut pieces + extra to sprinkle
- 1 tsp ground cinnamon
- ¼ tsp nutmeg

Step 1
Begin by preheating the oven at 170°F/340°C.

Using the jug of your Ninja and the stacked blade, add the bananas, sugar and butter and select low for approximately 15 seconds to mush the banana with the butter and sugar.

Add the egg, flour, cranberries, walnut, cinnamon and nutmeg pieces then select low again for around 15-20 seconds to combine all of the ingredients together.

Pour the banana bread batter in a baking tray lined with greaseproof paper, sprinkle extra cranberries and walnut pieces on top of the batter and place in the oven.

Bake for approximately 45 minutes.

Pierce to check the loaf if baked and allow to cool in the tin for 5-10 minutes. Then remove from the tin and allow it to cool on a wire rack and then slice.
