Banana & Olive Oil Bread
A deliciously moist banana bread recipe with added olive oil for moisture. This banana bread can be slice and store in a container, heated in the toaster for breakfast and you can spread it with butter or peanut butter.

Cooking mode

- 200g plain flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 125g unrefined brown sugar
- 125ml olive oil
- 2 eggs (beaten)
- 2 very ripe bananas (1 ¾ mushed and ¼ in slices)

Step 1
Begin the process by pre-heating the oven to 170C degrees.

Using the bowl of your Ninja Kitchen System and the plastic blade, pour in flour, baking powder, cinnamon and sugar and pulse several times to mix the dry ingredients together.

In a separate bowl, add the olive oil, eggs, and 1 and ¾ of mushed banana and mix the ingredients thoroughly.

Pour the mixture over the dry ingredients, select low to mix the dry ingredients together.

Pour the cake batter in a loaf tin lined with greaseproof paper and put the ¼ of the banana slices over the batter

Place in the oven – bake for approximately 45-50 minutes.

Allow the banana bread to cool before removing it from the tin then place on a wire rack to cool further.
