Cherry Glazed Banana Bread

Cooking mode

  • B2 ripe bananas
  • 150g caster sugar/or coconut sugar
  • 180g GF self raising flour
  • 80ml olive oil
  • 60g oat flour
  • 140ml non dairy milk
  • 1 tsp apple cider vinegar
  • A pinch salt
  • 1 tsp ground cinnamon
  • 1 tsp baking powder

For the cherry topping

  • Large handful fresh cherries to garnish
  • 1 cup icing sugar
  • 4 tbsp cherry juice

  • Step 1

    Preheat your oven to 180c and line a loaf tin with baking paper.

  • Step 2

    Combine the non-dairy milk and cider vinegar in a jug and set aside for 5 minutes. This
    will thicken into a buttermilk like consistency.

  • Step 3

    In your Ninja food processor, puree the bananas, then blend in the olive oil and sugar.
    Add in your dry ingredients and milk mixture, then pulse a few times until well
    combined and you’re left with a smooth cake batter.

  • Step 4

    Pour this into your loaf tin and bake in the oven for 45-45 minutes, or until cooked
    through. Allow to cool a little, before carefully lifting form the tin and transferring to
    a wire wrack.

  • Step 5

    Whilst waiting for your loaf to cool, mix together the icing sugar and cherry juice to
    create a delicious glaze. Drizzle over the top and garnish with fresh cherries.
