Cherry Glazed Banana Bread
Cooking mode

- B2 ripe bananas
- 150g caster sugar/or coconut sugar
- 180g GF self raising flour
- 80ml olive oil
- 60g oat flour
- 140ml non dairy milk
- 1 tsp apple cider vinegar
- A pinch salt
- 1 tsp ground cinnamon
- 1 tsp baking powder
For the cherry topping
- Large handful fresh cherries to garnish
- 1 cup icing sugar
- 4 tbsp cherry juice

Step 1
Preheat your oven to 180c and line a loaf tin with baking paper.

Combine the non-dairy milk and cider vinegar in a jug and set aside for 5 minutes. This
will thicken into a buttermilk like consistency. -
Step 3
In your Ninja food processor, puree the bananas, then blend in the olive oil and sugar.
Add in your dry ingredients and milk mixture, then pulse a few times until well
combined and you’re left with a smooth cake batter. -
Step 4
Pour this into your loaf tin and bake in the oven for 45-45 minutes, or until cooked
through. Allow to cool a little, before carefully lifting form the tin and transferring to
a wire wrack. -
Step 5
Whilst waiting for your loaf to cool, mix together the icing sugar and cherry juice to
create a delicious glaze. Drizzle over the top and garnish with fresh cherries.
