Peanut Butter Cookie Dough Protein Bars

Cooking mode

  • 300g rolled oats
  • 85g soft pitted dates
  • 2-3 tbsp peanut butter
  • 2 tbsp honey
  • 3 tbsp protein powder- Peanut flavour works best
  • Large handful Chocolate chunks
  • Handful cashew or almonds
  • 60g dark chocolate for topping

Utensils

  • Step 1

    In your Ninja Kitchen food processor, combine the dates, oats, protein powder, honey, peanut butter and nuts and blend until everything is well combined and starts to stick together. You can add extra peanut butter here if your mixture isn’t holding together.

  • Step 2

    Add in your chocolate chunks and pulse the mix a few times to evenly distribute the chocolate. Transfer this into a lined brownie tin or container and firmly press down and smooth over the surface. Allow these to set up in the freezer for 2 hours.

  • Step 3

    Melt the dark chocolate and spread this over the top of your cookie dough bars, then allow these to chill for a further 20 minutes to allow the chocolate topping to set.

  • Step 4

    Carefully slice into bars and enjoy!
