Peanut Butter Cookies
With minimal ingredients and no eggs needed, I’m sure you’ll have most of these ingredients in your store cupboard already.

- 225g smooth peanut butter
- 140g dairy free butter
- 150g light brown sugar
- 190g self-raising flour
- 90g peanuts
- 7oz smooth peanut butter
- 4oz dairy free butter
- 5oz light brown sugar
- 6oz self-raising flour
- 3oz peanuts

Begin by preheating the oven to 180c and lining two baking trays with parchment paper.
In your ninja add the peanut butter, butter and light brown sugar. Blend until ingredients are mixed and creamed together.
Next add the flour and blend again until the mixture resembles cookie dough. If it seems too wet add some more flour. If too crumbly add some more peanut butter.
Empty into a bowl and fold half of the peanuts through.
Scoop the mixture into 12 balls and place them spread out onto the trays.
Flatten them slightly and push the remaining peanuts into the tops. Bake in the oven for15 minutes and allow to cool for a further 5 before eating.
